Created in 2009, Sonoma Toma delivers a smooth creamy texture with an unapologetically rustic rind – it’s a mold party – achieved by specific ripening conditions and careful patting & turning during the aging period. The buttery semi-firm paste coats the palate, pleasantly balancing the earthy notes of the natural rind. Made only with rich jersey cow milk which comes from a small family farm in Sonoma County where the cows graze freely. Due to the limited space in our aging room, this cheese is only produced n small batches intermittently throughout the year.

Young Sonoma Toma cheeses in the aging room, these are about 3 1/2 weeks old and are now developing a nice rind of natural molds, just like we want.
